Make a set of open ended questions to ask your "cultural friend" about how he/she gives or exchanges in his/her native culture. You might say, "Tell me about gift giving in your culture." Ask him/her about major festivals and how they impact the economy of their culture. Write up his/her responses into an essay. Post your essay to your electronic portfolio.
